You can use version script to hide or export symbols. Specifically,

{ local: *; global: foo; bar; baz; }

exports only foo, bar and baz from your shared object file or executable and hides everything else.

Ok cool, I'll have to try that at some point. I saw hints about this but nothing I managed to make much sense of.
Is there a way to keep everything but hide specific things?

Yeah, you should be able to flip the condition, like this { global: *; local: foo; bar; baz; }.
