The sample crontab provided by sysstat actually calls the sa2 script at 23:53. This time is just given as an example and can/should be modified by the user. Time 23:53 was taken because it is consistent with the default sampling interval of 10 minutes.
Anyway yes, you can calculate the previous day's stats after midnight to get a full day's worth of data. To tell sa2 to do so, sysstat should be configured with option --enable-yesterday (ie. "./configure --enable-yesterday).

Ah. It would be neat if --yesterday was a command line argument to sa2 and not just a config param.

In fact, "--enable-yesterday" configure option only sets the value of the YESTERDAY variable to "--date=yesterday". Without this option, this variable is empty.
This variable is located in the sa2 script. So of course, you can modify it whenever you want, even after having installed sysstat tools.
