Ok so the solution is actually quite simple: ARG should be the first instruction!

For instance:

ARG PHP_EXTENSIONS="apcu mysqli opcache pdo pdo_mysql zip soap"

FROM thecodingmachine/php:7.2-v2-apache-node10 AS builder

COPY --chown=docker:docker sources/web .

ENV APP_ENV=prod \
    APACHE_DOCUMENT_ROOT=/public

RUN composer install &&\
