You can use expose loader to make knockout global variable again.
Example configuration:

rules: [
  {
    test: require.resolve('knockout'),
    use: [
      {
        loader: 'expose-loader',
        options: 'ko',
      },
    ],
  },
],

You can also use this configuration only for development mode.
