Doing more experimentation, it appears that they implicitly inherit category. If you define an explicit category on a child item, it obviously overrides the parent one, and appears on the defined category page.
If you don't define one, the child WILL appear with the parent, but the block will have an empty category.
So, unless you're using the block category in a template for some reason, this won't have any tangible impact.
Bottom-line: May want to make a note that if an item has a parent, there is no need to define a category as it will appear in the same place as its parent and call this 'done'.
If you'd like this explicitly added to the README, let me know and I'll create an appropriate PR.
