The version with --image_size isn't released yet. You can update to the pre-release 1.2.0-alpha if you want using

wp cli update --nightly

If it doesn't suit, you can go back to the released 1.1.0 version with wp cli update --stable. For more info, see https://github.com/wp-cli/wp-cli#installing and https://make.wordpress.org/cli/handbook/installing/#updating-wp-cli
