That's sounds like a Nix problem, where is /nix/var/nix/profiles mounted?

On a mostly normal zfs volume, I think?
❯ mount | grep /nix
tank2/nix2 on /nix type zfs (rw,relatime,xattr,posixacl)
tank2/nix2 on /nix/store type zfs (ro,relatime,xattr,posixacl)
