From your descriptions above, it doesn't seem that you are running the latest version of nfs-volume-release. In the latest release, you would get consistent behavior between nfs and nfs-legacy and nfs-experimental would no longer exist. Also you would get an informative error message when using the options you specify.
Closing this issue, as it appears to be based on an old, unsupported version of nfs-volume-release.
