[Improvement] Mention different third party "displays" for the M8HeadlessFirmware

Hi, the documentation for the M8HeadlessFirmware at M8HeadlessSetup.md states that the tool "TouchDesigner" is required to work with the M8 Headless.

However, there are tools like m8c or M8WebDisplay which not only support Mac and Windows, but also Linux.

I think these tools should also be mentioned in the documentation, to make users aware of the different possibilities they have.

I will create a Pull Request for this.

Sound problems on Windows 11

I had some trouble getting sound to work in Windows 11. Audio was coming into the USB subsystem but the device wasn't visible in the mixer, so there was no sound from the Teensy.

The user interface for Windows 10 at https://github.com/Dirtywave/M8Docs/blob/main/docs/M8HeadlessSetup.md#windows has changed in Windows 11, and there doesn't seem to be any way to get to the "Sound" dialog "Recording" tab from the Windows 11 desktop. I asked about this in the Discord and "impbox" said to try running "mmsys.cpl". That worked and I was able to set the "Listen" checkbox and get sound coming into the mixer.
