Revise the Docker config to not use root permissions

Running the processes inside the container as root isn't great. Instead, it should create a user and run as that instead, as in http://jdlm.info/articles/2016/03/06/lessons-building-node-app-docker.html.

The npm-modules stuff in that article might also solve the weird node-sass bindings issue, come to think of it.

Make the `availabilities` data structure more natural

Right now the data structure for availabilities (in the participants model) looks like:

availabilities: [
  {
    day: DayOrDate:String,
    time: SecondsAfterMidnight:Number,
    availability: AvailabilityType:String
  }, ...
]

This was a good first stab, but it's becoming cumbersome and hard to reason about, and I'm finding myself fighting against it, especially implementing Immutable. It should be changed to:

availabilities: {
  DayOrDate:String : {
    SecondsAfterMidnight:String : AvailabilityType:String,
    ...
  }, ...
}

This does mean that the times have to be represented with Strings, but we'll live, I think.
