[ghe-logging] Elasticsearch stops on error, bootstrap checks failed

Describe the bug
After docker compose up -d, Elasticsearch stops. This prevents Graylog from running as-expected.

To Reproduce

1. Clone djdefi/ghe-admin-containers, cd to ghe-logging
2. Configure password_secret and root_password_sha2 in docker-compose.yml
3. docker compose up -d

Expected behavior
Graylog, Elasticsearch, and MongoDB all start and run OK.
