Move iceoryx-rs to eclipse-iceoryx

To have this in a more prominent location and potentially speedup development, this should be move to https://github.com/eclipse-iceoryx/iceoryx-rs

subscriber multithreaded goes to Stopped state right away

The multithreaded example stops right away.

This seems to be because it relies on code that is still on the TODO list.

I created the ticket to signal there is an interest in a rust crate.
I'm currently evaluating if iceoryx is suitable for a work project, and if my employer is going to pay me to re-learn C++ they might as well pay me to learn rust.

Sidenote: as far as I can tell the iceoryx submodule can be updated to v1.0.1 without (additional) breaks.
