That's a weird error...
Can you try to reinstall all the lsp related packages (lsp-mode lsp-ui cquery) by deleting their directories in ~/.emacs.d/elpa/ ?

I made a clean install of my entire emacs (it's no big effort, I have my .emacs.d on github), now lps-ui is working again.

There were probably issues with the byte compiled files. I'm closing the issue
