Reservations being made with the wrong timezone

Yeah, I'm guessing this is because I did everything wrong when writing this module. Can you post up here what the proper way to handle things? I went through the code here quickly and here are the steps where I use the PHP DateTime module to convert things to both a timestamp and over to UTC for the database and then convert back when it comes out. Definitely not the drupal way of doing things, if you've got some time to help with the right way to do this in Drupal I'd appreciate it!

1. Read input from forms api and convert string to datetime object
2. Convert datetime from EST to UTC
3. Get a timestamp string object and insert into database
4. Retrieve timestamp from SQL, convert to datetime object
5. Set object timezone to EST
6. print in various places
