Provide more week binning options
Currently the only option is to bin dates by ISO week, grouping dates to monday (day 1 of the ISO week).
It would be nice to have more options here as not all epi data is reported by ISO week (week starting monday), sometimes by Epi week (week starting sunday) or other country specific variations.
The aweek package provides tools for achieving this.
Breaks and labels would need to be explicitly provided as date_breaks = "1 week" and date_labels = "%V" would not be aligned or accurate for dates that do not fall on the monday of an ISO week.
Worth following this current open issue in the inicdence2 package for dealing with date labels reconverse/incidence2#17
