Optimize mounts

Currently a lot (all of the Dokuwiki installation?) is thrown into /config, much more than needed.

Idea: ./config, ./data, cache as volume

Data migration/Backup/Restore

Currently a farce. Constant permission problems, as already seen in #4.

Makes upgrading an installation a massive pain (and guess what I want to do frequently at the moment).

The ultra long RUN line is annoying as hell. I reckon we can afford a COPY.

Switching back to the text editor sometimes works by reloading - usually not. Manually installing the VE via the extension menu seems to work just fine.
