Refactor Lexer to Use `Peekable` Iterator for Character Peeking

Summary

This issue proposes a refactor of the Lexer struct to improve its efficiency and readability. The primary change involves replacing custom peek(), peek_next(), and consume() methods with the use of Rust's Peekable iterator from the standard library. This change aims to simplify the lexer's implementation and make it more idiomatic.

Changes

  1. Refactor the Lexer struct: The chars field should be of type Peekable<Chars<'_>> instead of Vec<char>.

  2. Update the new method: The source string should be converted into a Peekable<Chars<'_>> iterator.

  3. Refactor the scan method: The scan method should use peek() and next() to iterate over the characters.

  4. Remove custom peek(), peek_next(), and consume() methods: These methods won't be needed as we will be using Peekable.

Testing

Ensure that all existing unit tests pass with the new implementation.
