Only seeing an error in the log viewer: KeyError: 'uuid'

That is actually an Home Assistant error fetched from the logs of Home Assistant (and not output from the add-on, but from the Home Assistant Core).

Had I just waited a little longer, the log viewer started showing logs after all :-)
