Multiple warnings and impossibility to build for iOS and iOS Simulator

After successfully finishing the build operation and integrating static libraries, I got a bunch of warnings like

was built for newer iOS version (14.3) than being linked (14.0)

1. Is it possible to fix it somehow?

2. Second problem, for now, I couldn't find any possibility to use libraries with -ios suffix and -sim suffix together in the app together, only with -ios suffix and the successfully build for the device without simulator or only with -sim suffix, then it successfully builds for the simulator but fails in making for the device. Is there any way to integrate both libraries set (with -ios and -sim suffixes) into the app to build as for the device as for the simulator?

tesseract-build Scripts fail building tesseract 5.0.1 under macOS 11.6.3 on arm64

Provided Scripts build tesseract 4.1.1 perfectly, but fail trying to build tesseract 5.0.1

Building script fails with :
Undefined symbols for architecture arm64:
