How to ensure we collect our 3-5% fee

Okay so several people I have talked to about this project have mentioned the difficulty of making sure we collect our 3% fee. What if people were to use our app for inventory management and to find each other on the exchange and conduct their business off of the app, to avoid our fee? My suggestion(s):

• Automatically deduct that 3% from each invoice that is completed. That way, if an invoice is confirmed, we just bill/deduct that percentage of the invoice and credit our account by that amount.
