Update Readme.md to reflect changes made after fork from upstream

We made several changes here to make this work with the JiggyBase backend (api.gpt-gateway.com) instead of OpenAI.

This issue to meant to allow a new dev to get up to speed on this codebase and the changes made here while updating the Readme documentation.
