Document config.example.json

The current config example shows the format of the config options, but it does not explain what they do and how to obtain that field. I am interested in deploying this bot but I need some basic documentation to do so. The only config option that I fully understand is the discord_bot_token option.

I think it is perfectly fine to put comments in your example json file since it isn't intended to run without modification. If you do not have the time to write everything about the config file, I can fill out the documentation further if you can provide some brief explanations.
