VersionConflict exception when running sim-pack

I tried installing and running sim-pack as follows:

conda env create -f environment.yml
conda activate bonsai-packaging
pip install -e .
sim-pack --help

That resulted in the following exception:

pkg_resources.ContextualVersionConflict: (cryptography 2.9.2 (c:\users\forrest\.conda\envs\bonsai-packaging\lib\site-packages), Requirement.parse('cryptography>=3.3'), {'pyOpenSSL', 'pyopenssl'})

I'll also attach a text file containing the complete output of the exception call stack and the output of pip list:
sim-packaging-output.txt

Any ideas what I'm doing wrong? I'm not sure if this is a problem with sim-pack or something unrelated that isn't working with the way I'm trying to set up the Python environment.

Specify different base image?
