Abstract out some of the stuff in the main server file. Move graphql routes and main /register and /login route to the routes folder in index. Move mongo connection to a setupDB util

Categorize mutations / queries / subscriptions

• Categorize them into trainerMutations, userMutations, etc. similar to the methods directory

Gonna do a little renaming of the methods and queries to make sure they are easier to follow.

trainerId field on user

@alexknipfer ideas on a better name for this field, I think this could eventually become confusing, we need something to identify whos client the user belongs to if they are a client.

Remove accessToken from currentUser

• No need to pass the access token, it's passed in the headers, can verify user that way

Remove session

Remove sessions cause we are not going to use SSR so its not really needed.

Fix naming of queries, and methods of models to make them more generalized and reusable instead of for specific user types.
