Does not work in Ruby 3

Hey 👋

Just setting up a very old API and noticed I was using brine. By chaining -vvv to cucumber invocation, I saw the error

undefined method `escape' for URI:Module

Apparently this is a Ruby 3 breakage. Ruby 2.7.6 works just fine.

Side note: Is it worth marking this project as archived?

Integrate new cucumber-expressions to avoid arity issue

Running ruby-check can yield errors due to using an outdated ruby version...this should be verified in some way or another. This may be due to rbenv not being loaded or something for which guidance could just be included in an error message.
