Как то странно. В логах php пишет что используется функция mail, а в логах сайта что отмечено "Использовать заданые настройки smtp". Так какой способ был изначально настроен и работал? Галочка "Использовать заданые настройки smtp" сейчас стоит и настройки подключения к SMTP заданы напрямую на сайте?

Да галочка стоит. Настройки в панели настраивал

Через какой сервис отправляешь? Яша и гоша требуют ssl/tls шифрование. Движок его не поддерживает.

Ненене. Если отправляешь через смтп, то ты должен указать смтп сервер.
