Yeah that's right, so the outputs you are showing are dicts. The values look like strings but you will notice that they do not actually have quotes. They are actually objects that have a name and url attribute.

Each dict is a full course and each key-value pair is section information

Okay, so let's say I want to reference a course's specific Sidebar element and the courses number is '12345', how would I do that?

Each Course has an attribute called course_id, from there you use that course's section dict to like the_course_i_want.sections['my section']
