Don't hardcode `openedx` github organization

The script could be made more flexible by forcing users to specify ORG/REPO. However I'm lazy and my use case is only in one org right now.

ie. invocation export-gh-issues.py csv org1/repo org2/repo

Remove hardcoded "decoupling" line

Originally the script was written to give me all the decoupling tickets - which were tickets labeled "decoupling" across many repos, and then every issue in the decoupling project (unlabeled). when we're done with all those tickets, change

Allow users to customize set of filtered fields

By default the script filters the raw GitHub-returned json to a small number of what I deem are useful fields. These are: "url", "number", "title", "body", "created_at", "updated_at", "user" (github username).

Additionally, the following two fields are returned as nested json (if json output is chosen) or as a flattened list (if csv output is chosen): "labels" and "assignees"

Allow users to pass options to add or remove from the default set.
