Updates to docker-compose.yml

Thank you for making this yml available. It was the only one I found that I managed to get working with BookStack.

But, I had to make changes to it to get it working. And, if you're as impatient as I am, you'll make several changes at once, never knowing which one actually contributed to the fix. So I'm just going to list my changes here, in case someone else can benefit.

1. Used the images 'traefik:latest', 'lscr.io/linuxserver/bookstack', and 'lscr.io/linuxserver/mariadb' without specifying versions.
2. For both bookstack_web and bookstack_db, changed PUID and PGID to 1000.
3. Included 'https://' in bookstack_web APP_URL.
4. For bookstack_web, included:
   ports:
   • 6875:80

Hopefully, someone more qualified with traefik or bookstack can identify which factor contributed to the fix... or if my install is going to blow up in a few days.
