Note that I'm having very similar issues with the docker install.

The web version support location pointing to object storage (AWS S3, minio, S3proxy, Wasabi, R2) only.

My bad, just realized that on the product page. What's the reason for that? Is it technical?
My goal is to be able to tag a certain number of files on a shared local storage system (mounted on the server running the web server which makes it look local). All the users are able to access the storage and look for files based on the tags. Does any of the Tagspaces product allow that?

Yes it is technical, TagSpaces is a front-end application, which can connect to S3 back ends. For you use case you can use S3Proxy to expose a shared folder for example on a NAS and connect it with TagSpaces as S3 location.
