I would say that it is highly recommended to use verbatim fields to capture data that are as close to the source (labels, field notes, catalog cards, ledgers, herbarium sheets, etc.) as possible. Reserve the non-verbatim equivalents for data that derive from the verbatim fields and follow the standards for content of those fields. Dates are a good example. Suppose an insect label had "7 vi 1934" for a collecting date. That is perfect for verbatimDate. In addition, the following could be populated as well to be complete and consistent:

year: 1934
month: 6
day: 7
startDayOfYear: 158
endDayOfYear: 158
