Blender 3.0 - making the mesh symmetrical in mesh > symmetrize causes the mesh to change its base state into half of what it should be

It's kinda hard to describe what I'm saying but:

The mesh works fine with the addon. But I want to make it more symmetrical because a few verts are off, so I go up to mesh > symmetrize to make it perfect. It looks good! Except now when I click reset, this happens:

I mean I know I probably shouldn't be messing with the cloth after making the pattern, but it's really common to need to edit it so I may just be skipping something. I don't have a cache I don't think and I'm not doing the animation version, just continuous mode

Collision/sewing error, Blender 2.91.0

Steps:
1: Added character (MB-Lab)
2: Turned on collision while selecting character mesh
3: added plane
4: turned on cloth (in the MC menu)
5: sized plane and in edit mode duplicated it to the back
6: selected vertices I wanted to sew and clicked sewing lines
7: This error is thrown
