add GND plane on the extension board

Hi,

The extension board was made in a rush... it does not contain a GND plane.
Turns out, that is slower and less environmentally friendly to fabricate!

So, this issue is a request for us to add a GND to the extension board and release a new PCB version.

RIOT-OS support

Big Dot has been ported to RIoT-OS a couple of years ago... we need to update the board files in the RIOT-UVA repo w/ upstream and submit the PR, so our board is officially supported.

replace LDO on the Big Dot PCB

During the pandemic many parts went out of stock and many got discontinued! Turns out, this is the case of our low power voltage regulator on the Big Dot project.

It is necessary to find a replacement part for U1 and substitute it, releasing a new version of the PCB once it has been tested.

The new version of the Arduino IDE (v2.0) seems to be causing trouble for extension packages for various boards and architectures. This is the case of SAMD (such as Seeed's XIAO) and SAML boards (ours). We can continue using v1.8.x until Arduino v2.0 is stable, but we must plan for the upgrade soon.
