Thank you for catching this issue. The underlying requirement is that, to be adequately accessible, the content may have to be shared with meeting participants in the original file format. Screen sharing is inherently inaccessible to screen reader users.
Also, Microsoft Teams (and I haven't investigated others) can show PowerPoint content in a meeting as part of its Web interface. This is done in such a way that text alternatives, document structures, etc., are all disclosed to a screen reader. This feature is limited to PowerPoint files though. The screen sharing mode remains inaccessible.
So, it seems to me that the existing text in Accessibility of Remote Meetings is in fact correct. All of the WCAG success criteria (at the chosen conformance level) need to be implemented.
If you think it could be clarified further, suggestions for improvement would be welcome.

I would suggest that the first bullet in 4.1.1 start with :
Because screen sharing is inaccessible, any prepared electronic content (e.g., documents, presentation slides, prerecorded multimedia) that is shown during a remote meeting must be shared with participants in advance of the meeting. The shared content must meet the Web Content Accessibility Guidelines (WCAG).

I created pull request #18 to address this issue.
It is written in such a way that solutions which present the materials using Web-based technologies (Microsoft's, for instance) are covered.
