Add ability to change pronouns (e.g. from "it" to "he" or "she")

Hey, I did do this, but not through github, but I did it after you posted, so it should be current with any changes. I'm new to php, so I mostly just wanted to play around with it.

I don't know if you are interested, though, because I also changed some other things. I didn't want to edit the same text twice, so I moved all the legal text to its own function and then the shortcode functions just call that to get the text. I also changed a couple of things in the text for consistency. Specifically, sometimes it used "it" or "its" when referring to the company and sometimes it used "we," "our," and "us." I changed it to always be "we," "our," and "us" (the copy editor in me kicked in).

I did a diff and that's quite a bit of work. Kudos. I'm not the best PHP dev either, but you should at least submit a pull request (i.e. social coding).
