Should this support "v" releases better?

Hi,

we are using this action for a number of tools and it's working great. Until now we have always used it with numerical versions (x.y.z) without a problem.

Today we decided to start using it in another tool which versions have the "v" prefix and it seems that the support for those release is a little bit strange, so asking and sharing here.

Looking to the regex being used, it seems that the extractor is able to find / extract information from CHANGELOG files looking like this:

## v[4.4.4] - 2024-04-03
### Changed
- this.
- that.
- ...
...

But, it's not able to extract the information from CHANGELOG files looking like this (that I think are way more "usual"):

## [v4.4.4] - 2024-04-03
### Changed
- this.
- that.
- ...
...

With other words, it seems that the "v" is allowed out from the square brackets but not inside them. And that's the question that we wanted to share here if, maybe, it makes sense to support the later (inside) too.
