Suggestions

Awesome project, we needed something like this.
I have some suggestions, happy to discuss further.

A similar windows project that has a decent looking UI is SimpleDnsCrypt. Perhaps we can learn from that?

Bundle the sing-box binary version with the application on release. Lock the version too.
This means that version 3.1.0 bundles sing-box 1.4.1. And if a new release of sing-box comes, you can provide a new release of this UI, bumping to 3.1.1. This also means not fetching new versions of sing-box, which means better compatibility/reliability.

Add an argument flag or something similar that will disable any auto-update functionality (this is useful for distribution using package managers which handle updates).

Consider using BackgroundService link for running the sing-box process. When doing so, the event logs can be streamed, which you can have a separate view for that.
When autoupdate is enabled, use BackgroundService for that too. Can also use it for periodically fetching subscriptions.

Detect if there's other VPN/tun interfaces in use, and prevent "double VPN" situations.

I have more ideas, but for now I think the above will improve quality and reliability.
