Refactoring

There just needs to be some general refactoring. The training and testing packages along with MNIST needs reorganized and allow for more flexibility in adding training and testing data sets.

Documentation for use in Eclipse (Beginner-friendly)

Hello,

I have recently come accross this Java OCR repo, and been interested in applying it in one of my own projects. Since I am just learning Java, I would like to know if you could use some of your time to give a step-by-step usage guide for Eclipse. Mainly, I would like to know where to add .jar files, how to reference them in a new java file (of the same project), and the methods/params to call the OCR function(s).

P.S: If my wording/phrasing seems a bit strange, it is because I am a JS/Python developer, and completely inexperienced with Java.
